The 12 Days of Cocktails #2 - The Coldfront

Even though bourbon is the brownest of the brown liquors, we're still big rum fans over here at OFP.  It’s hard to beat a good Dark & Stormy but a mon’s gotta do what a mon’s gotta do.  Subbing in the Hudson Standard's Pear Honey Ginger Shrub for ginger beer mellows the ginger bite but replaces it with a pleasing fruit-forward tanginess that is both delicious and seasonally appropriate. 2 oz blackstrap rum

¾ oz lemon juice

¾ oz Pear Honey Ginger Shrub

½ oz rich demmerara syrup

2 dashes pear bitters

6oz club soda

Add all ingredients except club soda to a shaker filled with ice. Shake vigorously.  Meanwhile, place 2 large ice cubes in a collins glass, and add club soda.  Strain ingredients into the glass, stir briefly to combine. Garnish with candied ginger.
